Kitchen Tip Tuesday- Freezing onions

I heart onions. My husband is ok with them as long as he can not see them. I am not very attention detailed so our conversations kind of go like this around dinner time.

him:
I don't mind that you put onions in the "dinner" but next time can you make them smaller. I like the taste but not the texture.

me:
Sure.

and then I don't. Probably slightly passive aggressive on my part because what "texture" does chopped onion have but more likely I just forget because I am A.D.D.
THEN finally after almost 3 years of marriage and 6 years of living together, I got a clue!

I have started grating the onion.

Ok, I know this post was about freezing onion. Well I got a bag on sale and they were going to go bad so I grated a mess of them and froze them in ice cube trays. Afterwards I popped them out and put them in a freezer bag. Tip: leave the hairy part on and the onion stays together as your grate- see picture to see the hairy part of the onion.

Now BOTH the wife and the hubs can be happy. and no more repetive conversations... well about onions that is.

You crack me up. Shane and I have had VERY similar conversations. I have chopped onions before and frozen them only because I never use an entire one (obviously b/c Shane is not pro-onion.) But, the grating idea is great!! I'll have to try it. Thanks!
